Obvious to locals, invisible to visitors
There is a simple reason guidebooks leave this out: to the people who live here it is too obvious to be worth explaining.
Founded 1801. The ground floor has no chairs — you remove your shoes, step onto tatami and sit at long low boards, exactly as in the Edo period. Ask for a chair seat if kneeling is difficult.
When the pot arrives, pile on the spring onion without restraint — locals bury the pan until it is invisible. Add sansho pepper too.
The fish is properly written どじょう in four characters. The first owner thought four unlucky and switched to the three-character どぜう — the misspelling has stood for over two centuries.
What it is
Taito is a ward the shitamachi ward holding Asakusa and Ueno. The menu is a few handwritten sheets on the wall. Few choices means only the confident ones survived. The set with rice and soup is the safe pick — more satisfying than ordering à la carte. Arrive at opening and seating is no issue — though turnover is brisk, so lingering is hard. Seats are tight and coats end up on your lap — layering thin works better in winter. If you return, come at a different hour — the impression changes considerably.

Most customers live within walking distance. Disappoint them once and they never return — which keeps the floor high. The layout suits solo diners: mostly counter seats, and nobody encourages you to linger.
