주오구

주오구는 긴자와 쓰키지라는 최상위 관광지를 품고 있지만, 이 사이트가 보는 것은 그 옆입니다. 쓰키지 장외시장은 관광객으로 붐비면서도 여전히 음식점이 물건을 떼러 오는 시장으로 굴러갑니다. 그래서 시장이 정한 마너 8개조의 첫 항목이 '아침은 매입 우선'이고, 오전 9시까지는 프로의 시간입니다. 관광객이 이걸 모르고 이른 아침에 몰려가면 서로 곤란해집니다.

츠쿠다는 성격이 다릅니다. 강 하구의 작은 섬에 어부들이 정착하면서 잡은 생선을 오래 두려고 간장에 조린 것이 츠쿠다니의 시작입니다. '츠쿠다니'는 요리 이름이기 이전에 이 섬의 지명입니다. 지금도 좁은 골목에 노포 몇 곳이 남아 가게 앞에서 조리는 냄새가 납니다.

츠키시마의 몬자야키는 관광 상품처럼 보이지만 굽는 순서가 정해져 있어서, 모르고 반죽을 통째로 부으면 그 자리에서 지적을 받습니다. 건더기를 먼저 볶고 도넛 모양의 둑을 쌓은 다음 국물을 붓는 순서가 있고, 접시에 덜지 않고 작은 헤라로 철판에서 직접 떠먹습니다. 이 구의 스팟들이 공통으로 요구하는 것은 '보고 흉내내기 전에 순서를 알고 갈 것'입니다.

中央区は銀座と築地という最上位の観光地を抱えるが、このサイトが見るのはその隣である。築地場外市場は観光客で混み合いながら、今も飲食店が仕入れに来る市場として回っている。だから市場が定めたマナー八箇条の第一項が「朝は仕入れ優先」であり、午前9時まではプロの時間だ。それを知らずに早朝に押しかけると、双方が困ることになる。

佃は性格が違う。河口の小さな島に漁師が住み着き、獲れた魚を日持ちさせるため醤油で煮たのが佃煮の始まりである。「佃煮」は料理の名である前に、この島の地名だ。今も狭い路地に老舗が数軒残り、店先から煮る匂いがしてくる。

月島のもんじゃ焼きは観光商品のように見えるが、焼く順番が決まっている。知らずに生地を一度に流し込むと、その場で指摘される。具を先に炒め、ドーナツ状の土手を築いてから汁を流す順序があり、皿に取らず小さなヘラで鉄板から直接食べる。この区のスポットが共通して求めるのは、「見よう見まねの前に順番を知って行くこと」である。

Chuo contains Ginza and Tsukiji, two of Tokyo's biggest draws. This site looks at what sits beside them. Before nine, it is professionals' time. Tourists who arrive early without knowing this make life hard for everyone.

Tsukuda is a different creature. Fishermen settled this small island at the river mouth and simmered their catch in soy sauce to make it keep — the origin of tsukudani. The word is a place name before it is a dish. A few old shops still work the narrow lanes, and the smell of simmering reaches the street.

Tsukishima's monjayaki looks like a tourist product, but there is a fixed order to cooking it. Pour the batter in all at once and someone will correct you. You fry the solids first, build them into a doughnut-shaped wall, then pour the liquid inside; you eat straight off the griddle with a small spatula rather than transferring to a plate. What the spots in this ward have in common is a demand that you learn the sequence before you arrive, rather than copying what you see.
